We are going to keep it simple this time!
You won’t need half a shop of exotic herbs and spices.
I spent last weekend doing a bit of sculpture and enjoyed a very
interesting IT training at work during the week.
The result was not enough focus at night to work on the blog.
Or maybe just a bit of temporary laziness ;-)
The last few weeks all the tomatoes in my greenhouse are one by one
ready to pick.
It might not be a bad idea to use the tomatoes, when they are at the top
of their season, to make a tasty simple tomato soup!
I’m enjoying the second season in my little greenhouse.
A small greenhouse is fun to experiment with fruit, vegetables and herbs
that need a touch more heat and protection against the rain.

Sometimes you only need to make sure the ingredients shine by just
keeping it simple.
Of course the tomatoes play the leading role in the tomato soup :
slightly tart but not watery, balanced by the sweet coconut milk or
cream.
Add enough black pepper or a bit of chilli heat and the earthy, grainy
white beans to transform this simple tomato soup into a
nourishing meal.
And finally we make the tomato soup slightly more fresh and fragrant by
adding freshly chopped green herbs : a bit of parsley or

the onions for about 5-10 minutes until translucent.; Add the tomatoes,
coconut milk or cream and the water or stock. Simmer for about 15-20
minutes until the tomatoes are tender.; Mix the soup using a (stick)
blender. Perfectionists can strain the soup to get rid of the skins.
Season the tomato soup with salt, black pepper or chilli. Add a bit of
sugar or stevia in case the tomatoes are too sour. Add the white beans
to the hot soup.; Add the finely chopped herbs.; -
