A few months ago I was asked if I wanted to join in the “Spar
challenge”.
For the first round SPAR Retail sent a
box with ingredients. We had to create a few recipes and share the
results on social media.
This is the 2nd and final round. The assignment is to create a festive
dish. Let’s do a slightly more festive version of kedgeree.
Kedgeree is a British colonial dish.
Actually, traditionally for breakfast, but that’s why I think this
certainly suits any party.
Kedgeree is fantastic to wake up, on New Year’s Day or boxing day, your
taste buds because of the herbs and spices and above all to put the
surplus of leftover fish and shellfish to good use.
In short, an easily digestible way to overcome a hangover :-)
If you look into kedgeree recipes you’ll notice a lot of things are
similar.
Cooked rice, smoked fish (especially smoked haddock), curry powder, hard
boiled eggs and cilantro or parsley.
Sometimes with extra fresh herbs such as ginger and garlic, and more
vegetables. For example, tomatoes, peas or green beans.
So adapt the recipe to your own taste and what’s on hand in your
kitchen.
In my version, I started with a small amount of fennel and cumin. Every
time you bite on these spices you get a tiny spicy burst of flavour.
For this festive version I also added some samphire but that’s not
really necessary. Samphire creates a crisp and salty touch.
Use any kind of fish you like. I personally don’t like very fishy fish
flavours so I like smoked halibut and several kinds of shrimp.
This is it! The ultimate dish after a heavy night!

Slice the onion.; Boil the rice and drain.; Melt the butter and add the fennel and cumin seeds. Fry till fragrant. Add the onions and fry till coloured and soft.; Add the curry powder and samphire (optionally), tomatoes or other vegetables and fry for another 1-2 minutes.; Add the rice and smoked fish.
